homemade bone broth in a pressure cooker
simple. economical. nourishing.
ingredients
cooked bones (either chicken or beef depending on what type of broth you are using)
it’s okay to include fat and skin in the mixture, in fact, I encourage it!
to quantify: consider bones from about one whole chicken or bones from a 3-5lb roast
leftover/scrap veggie ends (carrot tops, onion roots, celery ends, etc)
water
pressure cooker

best practice is to plan to make a bone broth after you make a meal using a cooked rotisserie chicken or roast
separate the bones, fat, and skin from your meat source like rotisserie chicken or beef roast
note: the bones need to be cooked already for the bone marrow nutrients to separate for the broth
add bones, fat, and skin to your pressure cooker.
add scrap vegetables to pressure cooker. (optional)
fill pressure cooker with water to max fill line.
set pressure cooker to high pressure cook setting for 1 hour.
purge valve on pressure cooker.
strain broth into extra large bowl using fine mesh colander.
dispose of bones and vegetable scraps after draining broth.
store broth in glass jars in refrigerator for 7-10 days.
best used in soups, rices, risottos, or by itself

tips
using skin and fat with the bones will yield a higher collagen output in your broth. the fat and ligament bonds will make a more nutrient dense broth. you will see this gelatin layer form at the top of your bone broth when placed in the fridge. and it’s a sign of a great bone broth! and something you won’t find in store-bought bone broth.
alternatively, another best practice suggests making bone broth using chicken feet. I do not have easy access to use chicken feet, and I find it resourceful to use a roast chicken instead because I’m actually using the chicken for a meal and then using the bones to make bone broth. so to me, it feels like my chicken broth is free.
it is essential to use cooked bones in the pressure cooker. if you have a raw carcus you want to make bone broth from, I recommend “cooking” it in the pressure cooker on low for a couple hours with a thin layer of water at the bottom, then proceed with the recipe above.
