momma broski's crockpot chicken recipe

momma knows best…

prep time: 5 minutes

cook time (sides): 15 minutes

serves: 2-4

ingredients

  • 1-2 lbs chicken breasts

  • EVOO

  • lemon juice (1 lemon per breast)

  • 2-4 cloves fresh minced garlic

  • S+P

  • red pepper flakes

  • paprika

  • dried rosemary

  • dried oregano

  • dried basil

  • dried parsley

recipe

place chicken breasts in crock pot or pressure cooker.

coat chicken with even layer of EVOO, enough to fill 1/2 inch of the pot.

add lemon juice

sprinkle minced garlic on top followed by assorted spices listed.

no measurements necessary for the spices, just enough to coat the breasts to give them a nice “skin” once cooked.

heat on HIGH for 4 hours, or LOW for 6-8 hours.

serve with grain like quinoa and veggies like baked asparagus or pan steamed broccoli.

PRO TIP: cook quinoa with some of the sauce from the crockpot & drizzle extra all over your plate before serving.

PRO TIP: I like to prep the chicken in the morning before I head out for work that way it’s ready when I get home and all I have to do is make the sides!
