ingredients

  • brussels sprouts (about 10-15), based cut off and halved

  • 1 shallot, diced

  • bacon, cut into small pieces and cooked

  • 1 lime, cut in half

  • EVOO

  • S + P

  • crushed red pepper

  • 3 T balsamic vinegar

recipe

Cook bacon pieces to desired doneness and set aside.

Heat shallow pan with EVOO and diced shallots on medium-high heat.

Prep brussel sprouts and place face down in heated pan.

Sprinkle with S + P and crush red pepper.

Pan sear brussels approximately 7-8 min each side until crispy.

Add splash of lime juice from lime and about 3 T balsamic vinegar to pan.

You don’t want to soak the brussels, just enough to add some flavor. continue cooking for another 2-3 minutes until some of the juice cooks off.

Add bacon, stir, and serve.

PRO TIP: I like to make sure there a few stray brussels leaves in the pan when cooking because those will get nice a crispy and they add extra flavor to the dish.

PRO TIP: Feeling fancy? Crack an egg in the center of the pan once brussels are completely cooked and serve dish with a nice runny sunny side-up egg.
